Inspired by the early 1900s origins of our iconic, heritage-listed rotunda, this exclusive daytime residency offers a playful intermission from the everyday, brought to life through the creative lens of our culinary team.

This exclusive daytime residency is led by Head Pastry Chef Victoria Lennard, with the support of Executive Chef Jamie Musgrave, and invites you to discover high tea as you’ve never seen it before. Drawing on her global training and a profound connection to Australian native ingredients, Victoria has crafted a menu that artfully blends tradition with innovation — designed to captivate those who savour the delicate and the daring, in both sweet and savoury form.

Relish in the delicate richness of crocodile fat mille-feuille, the silky smoothness of emu egg custard tarts, and the indulgent marron claw tartlets.
